By that time, I'd been playing for several hours, so indeed I was pretty tense (and frustrated)
The sound thing is probably because my line-in mic had a stupidly low volume so I used a USB mic with two jacks and only one mic plugged in. I didn't think of it at the time, but that's probably the reason why it recorded only one channel.

I know that feeling, I've only made 2 recordings and they were both mediocre even AFTER doing a million takes.
I think doing this kind of thing is good though because when you record you highlight where you are struggling with a song and that way you can practice it.
Don't let your hurdles discourage you, let them empower you to improve yourself!
