I would recommend playing the background the whole way through, then playing the intro again, playing the melody, and then finishing the song by rolling (decreasing the speed) the intro once more, and then ending the song with a

Impressing a girl just by playing some FF song on guitar... sounds way too easy. :P
Anyway:
Cait Sith' Theme - Great song if you can give it the right feel
Descendant of the Shinobi - Easy and enjoyable song
Farm Boy - Medium difficulty and quite enjoyable, too
Tifa's Theme - Easy one, maybe a little too melancholic ...
FF7 Main Theme - A real classic
Edgar and Mash - Medium difficulty..
Lenna's Theme - Easy one, almost sounds like a love song :p

I'd recommend "Theme of Love" if she knows FF IV.

Either Ron Cruz's simpler version or the more complex lonlonjp arrangement.

she might not know interrupted by fireworks because i think it only plays once in the whole game. it is a really memorable part if she's not a hardcore fan she might not, and you don't want that "oh that sounds nice what's it from?" line. aerith's theme, cosmo canyon/great warrior, tifa's theme, or descendant of shinobi are all good alternatives.

if she knows FF4 go with the theme of love. i mean really just look at the name of it lol.

the prelude and chocobo themes are from just about all the games and really nice as well lol.

(sorry, i thought the wider the selection the better)

I just remembered To Zanarkand from FFX. It's really tricky in terms of letting the song flow but if you can manage it, it's so lovely. Nonetheless, you should figure out which Final Fantasy games she likes the most before you decide on a song.

PS: I agree with eddhead, you're quite lucky. ;o

PS2: You might need to change some fingerings in stamen47's arrangement. At least I don't always feel comfortable with his.

My ex loved Descendant of Shinobi, and she also liked that song from Chrono Trigger... Kabuki plays it... Ummmmm... I think it's like Dream _____ or ____ of Dreams or Dreamers something. I recorded both for her, and she loved them.

I agree with the guy that said Fisherman's Horizon. FFVIII is the lovers Final Fantasy so there's quite a few. Roses and Wine, My Mind, or Breezy (my personal favorite) are great.
